"C. Paul Morrey's Exam Results Chocolate Chip Cookies"

Good for soothing students on the day that exams are returned.

Directions:

1.    Gather the following ingredients:

1/2 lb (2 sticks) Happy Boy margarine (trust me, Happy Boy makes the best cookies)
2 large eggs
1 tsp. vanilla
1 tsp. baking soda
1/4 cup oatmeal (optional )
3/4 cup brown sugar
3/4 cup white sugar
1 bag (1 lb) of milk chocolate chips (I like Nestle)
2 cups white flour

2.    Turn on the oven to 320 degrees.  Use a 'no-stick' spray on the cookie sheet.  Put the cookie sheet in the oven to heat up.

3.    Put the margarine in a bowl and cover the bowl with a plate as a lid.  Put the bowl in the microwave for 1 minute. 

4.    While the margarine is melting break the two eggs into a large mixing bowl, add one lid full (about 1 tsp) of vanilla and 1 tsp. of baking powder to the eggs.

5.    When the margarine is melted add it to the mixing bowl.  Add 3/4 cups of brown sugar and 3/4 cups of white sugar and mix.

6.    Before the margarine cools, add 1/4 cup of oatmeal (if desired) and mix.  Add 1 cup of white flour and mix.  Add another 1 cup of white flour and mix. 

7.    Add the chocolate chips and mix.

8.    Use a teaspoon and a fork to scoop the cookie dough onto the cookie sheet.  (Airbake cookie sheets are the best.)  Bake each sheet for 9 minutes (11 minutes if you like them crunchy).  Repeat step 8 until you have no more cookie dough.

9.    Let cookies cool for five minutes before eating (if you can!)

10.  Store cookies in an airtight container (i.e. Tupperware) to maintain freshness.

Variations:

 If you like your cookies 'lighter' use 1 1/2 tsp. baking soda.
 If you prefer your cookies a little 'gooey' bake for only 8 minutes or use extra large eggs.
 You can always add more chocolate chips to your liking!
 Bake a big fat cookie and put it in a bowl with ice cream while it is still hot. Yummy!
 You could also try different types of chocolate chips, but I only like milk chocolate.
